I don't live anywhere near there but I recommend you go for somebody over 50 who has a traditional set up and does the cut throat razor for the neck - ideally an Italian guy etc...Avoid trendy overpriced places

Any classical style barbers should be able to give you what you want, as said above, would stay away from trendy salons,
